Fabulously Sweet

A Dash of This & A Pinch of That

If you saw my PB&J cupcake post, then you know how amazing that peanut butter frosting was. I was so in-love with it that I had to use up what was left-over from the cupcakes. Couldn’t just throw it away, could I! So I tried to think what to make with it. It reminded me of peanut butter cups, but not in a candy-making-kinda-mood, so I opted for chocolate cookie sandwiches, with it as the middle. I searched for a […]

It’s Thanksgiving already! Where did summer go? With the holidays approaching means a lot of baking in my house, especially once December 1st hits. But for now, I need to focus on Thanksgiving, which means a nice big stuffed turkey with all the trimmings and of course, dessert! I wanted to make a home-made pie since I’ve never attempted one. My boyfriend requested an ‘apple pie’, which from scratch is a tedious process, especially since I’ve never made one before. With […]

The Holidays are here…where does the time go! I figured since it being Thanksgiving time, that I should attempt a ‘pie-like’ cupcake. I toyed with apple pie, coconut cream pie, pecan pie, but finally decided on a banana cream pie cupcake and just so happened to have some very ripe bananas on hand, which are the staple for this cupcake. I was worried it might turn out too much like banana bread, but was glad the final cake was spongy […]

I had to share this ‘too cute’ diagram my co-worker sent to me. I’m not sure where he found it, but I love it! So to whomever created it, ‘Thank You’ for your time and effort in designing this fun piece of art! It’s ‘Fabulously Sweet’!

Wow, is all I can say. The goodness of a PB&J sandwich in a small delicate-delicious cupcake, is in my opinion, a masterpiece of baking. Anyone who enjoys a unique cupcake needs to make this at least once in their lifetime. I talked up this particular recipe at work, preparing my co-workersr for a scrumptious treat on Monday morning. They were all looking forward to it, and I have to say, it didn’t disappoint! I only wish I would have doubled […]

Peanut Butter and Jelly Cupcakes YIELD: approximately 24 cupcakes or 48 mini-cupcakes INGREDIENTS: FOR THE CAKE 2 1/4 cups cake flour (I used all-purpose flour since I didn’t have cake flour on hand) 1 tablespoon baking powder 1/2 teaspoon salt 1 1/4 cups buttermilk, room temperature (this helps it to not curdle) 4 large egg whites, room temperature 1 1/2 cups sugar 1 stick (8 tablespoons) unsalted butter, at room temperature 1 teaspoon pure vanilla extract FOR THE PEANUT BUTTER BUTTERCREAM Ingredients 3 […]

Banana ‘Cookies’ you ask? Well, they turned out more like a muffin-top cookie, a good one though. Whenever there’s ripe bananas I have a hard time throwing them away, so I usually make banana bread or muffins. This time I thought, cookies sounded interesting. I searched for recipes that had ingredients similar to a chocolate chip cookie recipe, plus bananas. I ended up combining the best of what I found, only to have them turn out more like a cake/bread. […]

I have wanted to bake something with bacon for awhile now, so I finally broke down and decided to use this savory ingredient in the form of a cupcake. Searching for example recipes was a little frustrating; there wasn’t too many out there in cyber-space and the majority I found were very similar. So in the end I found two that I liked. I combined the two recipes to create this heavenly bacon dessert and found a yummy maple cream […]

Saturday, November 5, 2011 Where do I begin…I have been contemplating a baking blog for quite some time and finally got the inspiration to start one. So today, I decided to start by making a basic vanilla cupcake with a butter cream frosting, that at the last minute turned into a ‘coconut’ butter cream frosting. Now I was excited about the ‘from-scratch’ batter, since I usually go the quick ‘box’ route. The batter turned out a little runny, so fingers […]
