Fresh Banana Muffins right out of the oven!
So if you can’t tell, I am in love, yes ‘LOVE’, with Ganache. It’s creamy, seductive, rich and super easy to make. This creation started out like most ‘banana’ treats do; having a few super ripe banana’s hanging around and not wanting to waste. I began making my normal bread, then decided to make muffins, since their always easier to share and more fun. As they were cooling, I pondered sprinkling them wit some powdered sugar, maybe a crumble and then it hit me…Ganache! Chocolate of course would have been the obvious, but I had some peanut butter chips laying around and decided to give them a go in ganache form. I have to say, I was pleasantly surprised. The richness of the peanut butter flavor, with the heavy cream was perfectly balanced. And who doesn’t love a peanut butter and banana sandwich, so why not in a muffin…even better!
